Cucumber Salad

CUCUMBER SALAD (Cacık)

1 large cucumber
1 cup plain yoghurt
3 cloves garlic
1 teaspoon dill weed and a few springs fresh dill
1 teaspoon dried spearmint leaves
1 teaspoon vinegar
3 teaspoons olive oil
1 teaspoon salt

Peel and quarter cucumber and slice very thinly into a bowl. Add yoghurt and the mashed garlic, salt, pepper, dill and mint, add vinegar and oil and stir. Garnish with fresh dill. Serve in individual small bowls.

Serves 4.
